Branzino leaves the Elmdale kitchen under a fermented-chili salad, tahini, sesame, cucumber, and marinated watercress — a fish plate carrying more layers than the word tavern usually advertises. Elmdale Oyster House & Tavern works both halves of its name at once: a raw bar and an ambitious seafood kitchen on one side, a neighbourhood tavern with a deep bar and real comfort-food range on the other. The seafood identity took hold in 2016, on Wellington Street West in Hintonburg, in a building with a long tavern history. Neither idea has crowded the other out since, and the menu is written as if a guest might want both in one sitting.

The raw bar is the honest starting point. Oysters on the half shell open the meal, and the kitchen builds outward into seafood that rewards a fuller order. Hamachi comes with habibi crunch, yuzu, white soy, and charred orange; a seafood chowder runs thick with Matane shrimp, scallop, and mussels; grilled octopus is set against romesco, dill pollen, fermented chili, and crisp phyllo; lobster bucatini arrives in a tomato sofrito with parmesan and herbs. A lobster-and-shrimp roll folds East Coast shellfish into dill aioli and celery, while popcorn shrimp and Humboldt squid calamari cover the fried end of the raw bar. The cooking stays precise without turning fussy — bright, layered accompaniments that sharpen the fish rather than bury it.

The tavern side keeps Elmdale grounded. A Tavern Burger arrives with Guinness onion jam, aioli, and aged cheddar; fish and chips means beer-battered haddock with coleslaw and curry dip; there is a ten-ounce New York strip finished with chimichurri butter, a crispy chicken sandwich slicked with hot honey, and a pressed lamb shoulder over bean ragù. The starters wander well past seafood too — a classic beef tartare with cured egg yolk and chips, mushrooms on toast built on port and brioche, charred eggplant with whipped labneh, pomegranate, and dukkah. Banoffee pie closes the sweet end. The breadth is deliberate: a table can order entirely off the raw bar or never touch it, and both orders come off the same kitchen.

The drinks list is built to match that reach. Wine, rotating draft and packaged beer, Scotch and Irish whiskey, classic and house cocktails, coffee, tea, and mocktails cover most of a table's moods, and the martini section — the Oyster House Martini among them — pairs squarely with the raw bar. Reservations run through an online booking page tied to the Wellington Street West location, which is the surest way in on a busy night. The premium-casual pricing bends to the order: a focused visit around oysters and one plate reads very differently from a full seafood-and-tavern dinner with drinks.

Elmdale is also built to change shape. Private hosting runs from a table of two to a party of a hundred and fifty, an unusually wide span that lets the same address carry an intimate dinner or a large buyout. On Saturday nights DJs take over after dinner and service stretches toward two in the morning, so a reservation booked late can run oysters and cocktails straight into music without anyone leaving for somewhere else. Monday through Saturday it works as a dinner destination; on the back half of the week it becomes a night out.

What ties it together is the street it sits on. Wellington West is Hintonburg's spine, and Elmdale reads as of that neighbourhood — a place that took a serious turn toward seafood without shedding the ease that made it a tavern in the first place. On a good Saturday both identities land in the same hour: a dozen oysters and a martini early, a burger and a DJ set later, one historic bar holding the whole arc without strain.
