That is the wager the Collingwood bar makes across its whole list — that the Caesar, usually the warm-up to a meal, can be the meal itself. The kitchen treats Canada's cocktail not as a single house recipe but as a format, and builds more than fifty named variations on top of it.

The range is the point. Feeling Dill runs dill-forward and clean, the build for a drinker who wants flavour over spectacle; Korean Beef pushes the savoury base toward heat and richness; Scorpion leans on Scorpion Tabasco and a habanero elixir for anyone chasing the burn. Bacon Bomb piles on smoke and salt, Taco Fest folds in tequila and salsa, and Beet Drop is built fully vegan rather than stripped down to an omission. For a table that wants to survey the whole idea, a Caesar Flight tastes across the styles before anyone commits, and a build-your-own route hands regulars the rim, the heat, and the garnish.

Several of the signatures are frankly meals. Breakie arrives under bacon, egg, and sausage; Smashville stacks chicken wings over spiced rum; the Surf 'n' Turf pushes furthest, using steak and seafood to close the distance between a cocktail order and dinner. The food menu is there to keep pace: Dill Pickle Fries, a charcuterie board, buffalo wings, grilled cheese, and a house burger give the elaborate drinks a salty, familiar counterweight. What all of this says about 1858 is that it takes a bar staple seriously enough to interrogate it. The Caesar is a distinctly Canadian invention, and the bar reads it as a canvas — dill, habanero, Korean beef, breakfast, taco, vegan beet — while keeping the familiar tomato-and-clam framework intact underneath every version. The most elaborate builds arrive as visual set pieces, garnished until the glass is part cocktail and part platter. It is a concept that rewards comparison, and the menu is at its most interesting when a table orders across it and argues about which direction the Caesar travels best.

The room runs on walk-ins. 1858 takes no reservations and points to quick seating turns as the reason, which makes a visit a matter of arriving, reading the floor, and settling in rather than booking ahead — worth planning around on a Friday or Saturday, when the bar stays open later than its weekday close. The informality is the appeal. A flight, a couple of focused signatures, and a shared board give a group plenty to split without everyone landing on the same order, and the format suits a birthday or a reunion that wants a centrepiece without a formal dining setup. When the seasonal patio is open it adds a street-side option; the mid-range prices track the scale and garnish of the builds more than any bargain on the drinks.

1858 opened in 2017, and the premise has proved durable: a bar organized entirely around the one cocktail most Canadians can already picture, then stretched until that cocktail can carry a whole evening. On Hurontario Street in central Collingwood, it works less like a place you stop into for a drink on the way somewhere and more like the destination itself — the Caesar as the plan rather than the prelude. Collingwood fills with visitors through ski season and again all summer, and a bar built on one memorable idea gives them an easy reason to sit down. It is Canada's contribution to the cocktail canon, taken by one bar as a reason to build a menu, and a night, around it.
