That single rule is the whole trick: order two pounds, set a sweet barbecue blend against something sharper, and a plate of wings becomes the clearest way to read what this downtown Windsor pub is about. The rest of the menu follows the same logic — plates built for the middle of a crowded table, and a kitchen content to let wings carry the marquee.

Those wings come bone-in by the pound, with flavours that range from Garlic City to Whiskey Barrel and a house rule of one sauce, rub or blend per pound — less a limit than an invitation to plan. Regulars treat a two-pound order as a tasting flight, pairing a familiar favourite against something they have not tried yet. For anyone who would rather skip the bones, the same spirit turns up in Goose Bites, the boneless version that gives the Loose Goose its name a second meaning. The wing features rotate through the week and tend to land on the quieter nights that could use the traffic, so the cheapest evening to work through the sauce list is rarely the busiest.

The burgers carry the same maximalist streak. The Stampeder loads a single Angus patty with barbecue pulled beef, onion rings, jalapeños, cheddar, bacon and garlic aioli — the all-in build, ordered when restraint is not the point — while the Big Angus stays a shade more classic under caramelized onion, Swiss, provolone, sautéed mushrooms and a Forty Creek barbecue sauce. Between the wings and the burgers sits the Dill Chicken Crunch, a crispy chicken breast that doubles down on its name with dill rub, pickles, spicy dill chips and creamy dill on a garlic-toasted potato bun. A Nashville hot chicken sandwich covers the heat-seekers. None of it is subtle, and none of it pretends to be.

The shareables show what the kitchen is really organized around, which is the group order. Downtown, the pub has held its corner of Ouellette Avenue since 2009, and it runs on a weekly rhythm the regulars learn to read. Wednesday takes money off the burgers, Friday discounts the Perch Basket, and the two-pound wing feature anchors the slower nights. Larger parties submit the downtown reservation form at least twenty-four hours ahead, catering included among the options, while same-day tables are handled first come, first served. The kitchen stays open to midnight through the week and past one on weekends, and a dedicated late menu after nine keeps fries, tots, poutine and shareable plates coming until the lights go up.

Put together, the downtown Loose Goose reads as a utility pub in the best sense — the answer when a Windsor table wants wings and a drink, when a group cannot agree on one cuisine, or when the kitchen down the street has already shut off its lights. Breadth and long hours do the work here that a single signature does elsewhere. The wings still set the terms: more than sixty flavours, one to a pound, and a standing invitation to split the order and argue about which one won.
