At Kin Gyu Japanese Grill, dinner is something you cook. A grill sits recessed in the centre of each of its twenty-eight tables, and the evening organizes itself around tending it — laying down ribeye and kalbi short ribs, turning them, dividing each round before the next goes on. Individual ventilation pulls the smoke straight down and away, so the cooking stays the centre of the night without the dining room hazing over by the second course. The name translates to Golden Ox, and beef is the honest anchor: a Japanese yakiniku restaurant in Uptown Waterloo built so the grilling is the meal, not a garnish on it.

The cuts reward that patience. Ribeye, prime short rib, kalbi short ribs and beef brisket carry the grill, and the kitchen keeps building outward from there. Torched rolls bridge into the sushi side: the Smoky Gyu Roll layers torched prime beef with a house-made sauce and caviar, the Agemaki comes deep-fried with spicy salmon and eel sauce, the Smoky Sake Roll turns on scallop and torched salmon, and the Smoky Dragon Roll finishes torched eel with caviar and spicy mayo. Around them sit the smaller, sharper plates — Litako Karaage, or deep-fried baby octopus; takoyaki; mini seafood tacos; crispy salmon rice bites; cheese corn; a dish of kimchi. Chicken katsu, miso salmon and salmon carpaccio widen the choices further, and a Tropical Breeze Slush of mango, pineapple and banana lands late to reset the palate. Beer and wine are on hand for the table that wants them. It is a menu arranged for a long shared meal, one that alternates textures instead of repeating a single heavy order to the end.

That range is the point of the format. Tables seat as many as six, the grilling runs all-you-can-eat, and the meal is built to unfold in rounds — a few cuts, a roll to pass, a snack to change the pace, then back to the grill. The energy comes from the tables themselves; with several grills going at once, the dining floor carries its own momentum, and no separate entertainment is needed when every group is busy managing its own fire. The Korean notes — kalbi short ribs, kimchi — sit comfortably beside the Japanese core without pulling it off centre. A custom mural and a bar round out a modern, deliberately social setting. Kin Gyu sits in a higher price band, which sorts it toward the planned group dinner — a birthday, a reunion, the night a table sets aside a couple of hours — more than the quick weeknight stop.

The concept comes from a proven local operator. Jin Chen opened Kin Gyu in 2025 as her third venture in the region, after Kinkaku Izakaya and Jinzakaya, and the jump in scale is deliberate — bigger, more theatrical, centred on cooking together rather than sending every plate out finished. Where the earlier izakayas leaned on small plates and drinks, Kin Gyu puts the grill at the centre and lets a group build the night around it. Local reporting has traced her approach to a plain working order: see, feel, smell, taste, repeat. The tabletop grill is that idea made literal, handing the last steps of the meal to the people eating it.

From its stretch of King Street South, Kin Gyu gives Uptown Waterloo something the neighbourhood didn't have — a grill-your-own room that treats dinner as an activity rather than a plate set down in front of you. Reservations run by phone rather than an online screen, which is worth knowing for a weekend table, since the night depends on settling in around one of the built-in grills. Start with the Smoky Gyu Roll while the grill heats, work through the ribeye and short ribs in rounds, and let the octopus and takoyaki mark time between. By the last round, the grill has done what the kitchen started, and the table has cooked its own dinner.
