The fish and chips come battered in Kölsch. That one detail — the house beer worked into the fry batter — says most of what there is to know about ABE ERB, an Uptown Waterloo brewpub on King Street South where the brewhouse and the kitchen answer to each other rather than running on parallel tracks. Plenty of restaurants pour their own beer. Fewer cook with it, or build a food menu whose main job is to sit well beside a pint. Here the two sides are treated as one project, and the fish and chips are only the most literal proof of it.

The kitchen has range without wandering far from the pub idiom. The Korean fried chicken sandwich is the plate that pushes hardest past standard bar fare — crisp and sharp where a burger would be familiar, though the burgers are here too, the Belt Buster and the Big Abe. Around them sit halloumi fries built for the start of a round, birria tacos, a wedge salad, grilled cauliflower, an Asiago and cheddar baked mac, and Yorkies to pull apart at the table. None of it strays into fussiness; the register stays comfort-first, with a few dishes turned a degree sharper than the format strictly requires. Most of it is sized to share.

House beer is the reason the place exists, and everything downstream is arranged around it. The taps are the first thing a regular reaches for; the food is ordered to keep them company; the pacing runs long, closer to a lounge than a dining room. The bar carries cocktails alongside the drafts, so a table that isn't drinking beer still has a full menu to work from. On Fridays and Saturdays that patience shows up in the hours — the kitchen and the taps stay on until midnight, well past when a straight restaurant would have cleared its last table.

The value is timed as deliberately as the beer. A weekday happy hour from three to five takes two dollars off appetizers, draft, and cocktails, and a second window opens later at night for the after-work and after-dinner crowds. It is an easy structure to plan around: a plate of halloumi fries and a house pour at four o'clock cost less and ask less of the evening than a full dinner, and they suit the hour just as well. The weekday afternoon is not dead time here — it is one of the better windows to walk in.

ABE ERB opened on King Street South in 2014 and settled into Uptown Waterloo as the kind of anchor a district like this runs on — a brewpub on a walkable main street with a patio that opens when the season allows. King Street South cuts through the middle of it, a stretch busy with students, tech workers, and the after-work crowd the brewpub is built to catch. More than a decade on, it keeps the unfussy, mid-priced footing of a neighbourhood local rather than a destination worth a special trip, closed on Mondays and running longest on Friday and Saturday nights.

For all the ways it can be pressed into service — a reserved table for a group, two seats at the bar, a weekday lunch, an order sent home through the usual app, the patio in July — what holds ABE ERB together is narrower and clearer than the list suggests. A house beer, a kitchen that cooks toward it, and no particular hurry to move you back out the door. Uptown Waterloo has no shortage of places to eat and drink; the ones that last tend to be the ones that know exactly what they are. This one does.
