The dough is three days old before anyone orders it. Notte Ristorante gives its Roman-style pizza base seventy-two hours and a twice-baking before a single topping goes on, and rolls its pasta fresh each morning — the kind of slow, exacting Italian work that usually arrives wrapped in ceremony. Here it does not. Chef and owner Michael Angeloni built the Church Street restaurant to carry a whole evening rather than stage an occasion: a spritz at the bar, a board of salumi, a table that can settle in for hours. The result is an ambitious Italian kitchen run at the pace of a neighbourhood bar.

The pizza makes the first case. The Funghi builds on that airy, blistered base with bechamel, roasted mushrooms, arugula, pecorino and a thread of truffle honey — earthy and peppery with a low sweetness running underneath, and the single clearest argument for the house style. The pasta answers it, and it is where the kitchen looks most at home. The Rigatoni alla Bolognese carries a deep ragù of AAA brisket and prosciutto di Parma, loosened with white wine and finished in Parmigiano Reggiano; the Grancio Raviolone sets one oversized parcel of Dungeness crab against zucchini crema, crisp guanciale and parsley oil, delicate and sharp in the same bite. From the secondi, short ribs come braised in red wine over risotto Milanese with horseradish and gremolata.

The drinks track the hours. Early on, the bar leans into aperitivo — spritzes, a proper Negroni, small bites to hold a table before it commits to dinner. The wine service stays approachable rather than exhaustive, and the list of amari lengthens as the night goes on. Notte opens at four every day and pushes past midnight on Friday and Saturday, with after-nine specials aimed at the crowd that turns up once other kitchens have closed. Walk-ins are welcome, which is the tell: this is a restaurant that expects to catch you on the way to something, or instead of it.

Read across the menu and the hours, the through-line is a sense of tempo. The dining room is dark, candlelit and deliberately loud, laid out for long dinners and groups that keep the plates coming. The menu assumes a table that shares — pizzas to split, pasta to pass, a secondo or two in the middle — rather than a plated procession of single courses, and the food is paced the way an Italian evening paces itself, unhurried and additive. The exacting work stays offstage. By the time the amaro comes out, the early aperitivo crowd and the later, after-nine tables are often there at once.

Notte did not appear from nowhere. It is the next chapter of Notte Trattoria, from the Toronto group behind The Berczy and Lucie, and the shift from trattoria to ristorante is not just branding — it marks a move toward a more composed, chef-led kitchen. Angeloni runs the place as chef, owner and operator rather than a hired name, and the regional Italian leanings, the visible salumi program and the unfussy wine list all read as one person's point of view rather than a committee's. The salumi bar out front is the clearest signature of that hand: the first thing the evening reaches for, and the last thing it lets go of.

What reaches the table is broad enough to hold a mixed group. Meat-free pizza, pasta and vegetable sides sit next to the brisket ragù and the short ribs — enough range that a table which can never agree still finds its plates, though Notte makes no special claim to being a vegetarian kitchen. The restaurant sits a few steps off St. Lawrence Market, and the evening runs on its own clock — order a spritz at four, and nothing tells you when it is time to go home.
