Grilled cheese is the order most kitchens treat as a backstop — the plate they fall back on when a child won't eat anything else, or when the fryer is already down. Cheezed builds its entire menu on it. The shop in Blue Mountain Village takes bread and melted cheese as a starting point rather than a ceiling, then runs the idea in several directions at once: smoky and heavy with pulled pork, sharp with dill and pickle, sweet with apple and jam. What looks on paper like a novelty counter is really a focused comfort-food kitchen working one familiar format for far more range than its reputation allows — an argument it has been making since it opened in 2022.

The builds have distinct personalities, and the kitchen wants you to taste the difference between them. The Big Smoke is the maximalist statement: pulled pork, Gouda and cheddar stacked on sourdough, with crispy onions and barbecue sauce sharpening the smoky-sweet edge. Apple & Brie moves in the opposite direction, sliced apple and red pepper jelly cutting the richness of soft cheese on buttered sourdough — the menu's clearest sweet-savoury contrast. The Grand Pickle leans all the way into acidity, dill butter and pickles and a dill sauce held together by Monterey Jack and cheddar. Around those three sit a jalapeño-popper version, a breaded chicken build called the Southbase, a Veggie Lover of avocado, Havarti, sun-dried tomatoes and spinach, and a rotating logic of sauces — ancho chipotle, chili-maple, red pepper jelly — that does much of the work of telling one sandwich from the next.

That spread is the whole point. The OG keeps things elemental — white bread, butter, cheddar and mozzarella, the version a child recognizes on sight — while the rest of the board rewards an adult willing to gamble on strawberry jam with Brie and bacon. A table rarely has to negotiate: the same short menu answers the person who wants exactly what they expect and the person who wants none of it. The house suggestion follows the same instinct, starting with the Big Smoke for the menu at its most substantial and adding an Apple & Brie when the table is sharing, so one order covers both the heavy and the bright end of the board. Grilled cheese turns out to be an unusually democratic thing to build a restaurant around.

The format matches the setting. Cheezed works a counter — order, wait, carry it off — and every sandwich is assembled to order rather than pulled from a warmer, which matters for a build that lives or dies on whether the cheese pulls clean. Breakfast runs on the same logic: the Bacon N' Egg folds cheddar, bacon, egg and a chili-maple sauce into the same grilled-cheese chassis, served all day rather than cut off at some mid-morning bell. The shop sits on the Main Street pedestrian stretch of the Village, directly across from the Starbucks, in the rustic-chalet register the resort trades in everywhere. Gluten-free bread and vegan cheddar are offered as swaps, though the kitchen is straightforward that a busy made-to-order line cannot guarantee allergen-free conditions for strict needs.

The hours give away how the shop expects to be used. It opens at ten every morning and pushes later on Friday and Saturday nights, which puts a hot sandwich within reach of a slow mid-morning, an après-ski thaw, or a takeout order carried back to a rental once the lifts have closed. The menu is short and the line moves, so it fits into the margins of a day the mountain already organizes. On a hill where most meals mean either a lodge cafeteria tray or a dinner reservation, a good grilled cheese handed across a counter answers a question the Village keeps asking.
