The oven runs hot enough to finish a thin-crust pizza in about ninety seconds, and that speed is the whole premise at Pizzeria Bros. Order at the counter, watch the pies slide into a high-heat oven, and walk out with something closer to a pizzeria's Saturday-night work than a food-court slice. The format came to Hamilton from Old Montreal, where the brand started, and it now runs out of a storefront at 118 George Street in the middle of Hess Village. Quick service here is a delivery method, not a ceiling — the menu reaches much further than the ninety-second bake would suggest.

The pizzas make the argument. The Sorrento layers sausage and fior di latte with arugula and spicy honey, a push and pull of rich, peppery and sweet that never buries the thin crust beneath it. Miele runs sharper — soppressata and onion for savoury weight, spicy honey for a lively finish. The Bombay is the boldest crossover on the board: butter chicken, mozzarella, hot banana peppers, onion and garlic, the peppers cutting through the sauce so the whole pie stays bright instead of heavy. Around those sit the classics a pizzeria gets judged on — Margherita, Four Cheese, Meat Lovers — alongside a Prosciutto Crudo, an Al Funghi, a Texas BBQ, and names that wander well past Italy: the Athena, the New Yorker, the Sicilian. Dessert closes it out with a Nutella and Oreo pizza and mini cannoli for a lighter finish.

That range is the tell. A counter-service pizzeria could stop at pepperoni and cheese to keep the line moving; this one runs a butter-chicken pizza and a spicy-honey pizza beside its Margherita and trusts diners to follow. The house-made dough, sauces and dressings point the same way — real prep behind a quick format, not shortcuts dressed up as speed. Dietary choices get the same care: a dedicated vegan pizza rather than a pie built by subtraction, a named halal option made with halal chicken and pepperoni, and a cauliflower crust offered as a gluten-sensitive alternative rather than a kitchen-wide guarantee. Beer and wine round out a counter most diners would not expect to pour either.

The approach traces back to Old Montreal, where Pizzeria Bros began in 2016 around the high-heat, quick-bake thin crust that still defines it. The Hamilton restaurant opened in 2023, carrying the same house-made components and the same customizable, personal-size format north into Hess Village. Nothing about it reads as a format built for volume alone — the dough is mixed in house, the sauces and dressings made alongside it, and the board keeps room for the odd experiment instead of settling into a fixed lineup. Catering and online ordering extend the same kitchen to tables well beyond the counter.

In Hess Village, the hours do real work. Sunday through Thursday the counter closes at eleven, but Friday and Saturday it stays open until two in the morning — one of the few places nearby still turning out full pizzas, not a stripped-down late-night list, after an evening out. The recurring two-pizza deal is the easiest way in: pair a Margherita with a Miele or The Bombay and let the second pie show what the kitchen does when it reaches past the classics. There is a small seasonal patio for the warm months, and a phone line for the questions an online menu leaves unanswered. Order at the counter, take one personal pizza or a stack of them, and the ninety-second bake keeps the wait shorter than the walk in.
