Cabana Pool + Lounge by Colonial Hotel

The pool opens at nine. The kitchen waits until eleven, which is the first useful thing to know about Cabana Pool + Lounge: swimming starts the day here, and the meal arrives whenever the day is ready for it. Cabana runs the poolside operation at the Colonial Hotel in the middle of Grand Bend — a resort-style pool, loungers, private cabanas a group can hold for a full day, cocktails, live DJs through the afternoon. What separates it from every other pool with a bar attached is the menu. Twenty-four dishes across five sections is not a snack list bolted onto a deck chair. The cabanas are reservable ahead of time, and that is how most groups end up using the place: settle the home base first, then let the food and the swimming arrange themselves around it.

The sharables carry the most detail. Gourmet Sliders come as sirloin burgers with caramelized onions, pickles, garlic aioli and cheddar. The Margherita Pizza is built on oven-roasted cherry tomatoes, fresh mozzarella, pomodoro and torn basil, and the Ultimo answers it with sausage, pepperoni and ham. Buffalo Chicken Wings are breaded, sauced and baked crisp, then served over fries. The salads do real warm-weather work — the Watermelon Feta Salad sets watermelon, cucumber, mint and red onion against feta and balsamic vinaigrette, with a Greek and a Chicken Cobb for anyone who wants the same coolness carrying more protein. Burgers run four ways: classic, mushroom and Swiss, bacon and cheddar, and a grilled chicken club. Sandwiches arrive on brioche — a Philly cheesesteak with sautéed mushrooms and onions, a spicy Buffalo chicken finished with ranch, a triple-decker turkey club. And a section called Colonial Classics holds the full plates: beer-battered haddock with fries, lemon and tartar sauce, and chicken Parmesan baked over spaghetti.

That last section is the tell. A pool club that only wanted to feed swimmers would stop at the wings and the nachos; this one keeps a complete plate in reserve for the diner whose afternoon has quietly turned into dinner. The four burgers make the same argument. A burger section with four distinct routes is a lane the kitchen means to run, not the single obligatory fallback for the person who will not order anything else. Breadth here is a scheduling decision more than a culinary one. A table that arrives at noon in swimsuits and leaves at dusk needs a menu it can order from twice, in two different registers, without anyone feeling they have repeated themselves.

The address underneath all of this is older than the format. Colonial Hotel opened in 1949 and has stood on Grand Bend's Main Street through every version of the town since — a hotel with a dining room, on a shoreline that empties and refills with the season. Cabana is the newer thing sitting on top of that history, and the naming of the Colonial Classics section is the seam where the two meet. Haddock and chips and chicken Parmesan are hotel dining-room food, carried outdoors and set down beside a pool.

Grand Bend runs on a season, and Cabana makes no pretence otherwise: a summer operation, presented as one. The cocktails and the DJs point at a particular kind of afternoon, and the kitchen declines to be decorative about it. The Watermelon Feta Salad understands the arrangement best — watermelon and cucumber and mint held against feta and balsamic, the coolest thing on a hot deck. The haddock understands it differently, arriving with lemon and tartar sauce as though the water outside were incidental. Both are true about how a day here actually goes, and the menu was written to hold the two of them at once.
