One batch of dough, made fresh every morning and never frozen, does most of the work at Sarducci's Pizzeria West. It leaves the kitchen three ways: stretched under cheese and seven toppings as the Kitchen Sink Pizza, folded and either baked or deep-fried as a Panzerotti, and dropped whole into the fryer as Zany Dough, a tangle of fried dough served with sauce for dipping. The West kitchen works from Tecumseh Road West in South Windsor, one of two Sarducci's addresses in the city, and it cooks for the table that shows up hungry and ordering for a group.

The Kitchen Sink Pizza is the natural centre of a shared order — cheese and seven toppings on a single pie, enough range that a table can read the house style in one round. The Panzerotti is its clearest contrast: the same fresh dough, baked for a softer chew or deep-fried for crunch, packed with cheese and four toppings and finished with a homemade meat sauce. Zany Dough works the other end of the meal, the same daily dough fried down into a starter with sauce for dipping, so a group can order something immediate before the main pie lands. Three dishes, one preparation, each doing a different job at the table.

Past that trio, the menu reaches wide on purpose. The Pizza Burger stacks Canadian beef with a cheese blend, pizza sauce and four pizza toppings; the Chicken Parmesan dinner arrives with salad, garlic bread and parmesan; and the pizza list runs to the playful end of the form, from a Dill Pickle pie to a Pulled Pork one. The garlic-forward sides carry the same from-scratch dough — Garlic Sticks baked with pizza sauce, Cheesy Bread built on garlic butter and blended cheeses — and poutine and chicken fingers fill in the corners. It is a menu that lets a whole table find its plate instead of bending everyone toward the same one.

What ties it together is the insistence on making the base in-house. The dough is mixed daily and never frozen; the pizza and meat sauces are built from tomatoes, garlic and basil rather than opened from a can. That groundwork is why one kitchen can run pizza, panzerotti and fried dough off the same preparation without any of the three tasting like an afterthought — and why the topping-heavy, plainly named pies read as a pizzeria comfortable being generous rather than precious about it.

The approach has had time to settle. Sarducci's has cooked from the West Windsor address since 1984, long enough for the from-scratch habits to read as method rather than marketing, and it now runs a second kitchen on the city's east side under the same name. The two shops keep their own menus and their own ordering, which leaves the West location as its own operation on Tecumseh Road West rather than a branch of somewhere else.

What the West kitchen is built for is the meal that leaves the building. Sarducci's West works as a takeout operation — pickup, delivery and direct online ordering rather than a dinner served in-house. The Monday-through-Thursday specials rotate through pizza sizes and topping counts, the everyday bundles pair a pie with sides, and large formats like an extra-large, four-topping pizza are sized for a table rather than a single order — all of it aimed at the same group math the rest of the menu already runs on. It is the Friday-night order, the answer when a table can't agree, the pizzeria a household calls when dinner has to feed more than a couple of people. Order from the West link rather than the east-side one, and the same daily dough that opened the meal is what carries it home.
