At Gyubee Japanese Grill, the cooking is the diner's job. Beef and pork arrive raw and sliced thin, a grill sits sunk into the middle of the table, and dinner becomes something the whole group builds together, one round at a time. The format is yakiniku — Japanese tabletop barbecue — served all-you-can-eat for a fixed price, so the meal is paced by appetite rather than by the size of an order. It turns dinner into a shared activity instead of a set of individual plates. On King Street North in Waterloo, Gyubee draws the kind of table that wants to linger, order in waves and argue happily over whose turn it is at the fire.

The beef list is where the meal finds its centre. Miso Marinated Steak carries a savoury, almost nutty edge that works as the table's reference point; Sweet Soy Marinated Short Rib answers it with something richer and sweeter, so the two cuts read as a contrast rather than a repeat. Prime Kalbi Tare Yaki and Pork Belly Tare Yaki lean on tare, the sweet-soy grilling sauce that gives yakiniku its lacquered finish. Seafood and vegetables share the same fire, so a single grill session can move from short rib to something lighter without anyone leaving the table. Portions are small on purpose, meant to be cut smaller still as they cook and pulled off the grill while they are hot, so a table moves through a long sequence of little plates instead of a few big ones. The best first move is the miso steak, a savoury baseline before the sweeter marinades take over.

Gyubee is more than its barbecue, though, and the rest of the menu exists to pace the meat. The sushi rolls run elaborate — the Black Deluxe Roll layers torched unagi, shrimp tempura, salmon, tobiko and crab; the Hotate Tataki Roll pairs torched scallop and salmon with shrimp tempura and avocado; the Salmon Tataki Roll cools things down with torched salmon, avocado and spicy mayo between beef rounds. Fried plates fill the gaps — Nagoya-style chicken wings, karaage, takoyaki, deep-fried rice cake and Hokkaido-style grilled potato chips. Bibimbap and yakiniku fried rice give anyone who wants it a base under all that protein, and there is beer and wine to run alongside the grill. Dessert waits at the end: a caramel-topped crème brûlée, or an ube ice cream cone tinted violet.

What the format really delivers is rhythm. Small plates arrive in rounds, the grill stays busy, and the table settles into a loop of cook, eat and reorder that stretches across the evening. Gyubee builds in three ways to do it — a focused weekday lunch set, with the Shabu Tare Yaki version arriving alongside miso soup and a house salad; a broader midday format; and the full all-day menu for a proper sit-down. The weekday set is the low-commitment way in, a quick and contained lunch, while the all-day menu is the version built for a group with an evening to spend. The all-you-can-eat clock runs on a timer, though: since the Waterloo location opened in 2023, lunch seatings have held to about an hour and three-quarters, and the all-day service to roughly two hours.

A few practical things shape the visit. The Waterloo location takes Canadian debit or cash only, which is worth sorting out before a group splits beef, rolls and several grill rounds across a single bill. The meal also works best with numbers — four hands keep a grill productive in a way two cannot, and the reorder-in-rounds format rewards a table that came to make an evening of it. Delivery exists for the sushi and the fried sides, but it leaves the grill behind, and the grill is the point. Gyubee makes the cooking as much of the draw as the food, and on King Street North that trade lands: you leave having made dinner, not just ordered it.
