Québec snow crab reaches the table at Edulis in spare company — fennel for freshness, a spoonful of mousseline to carry the sweetness — and that economy is the argument the kitchen keeps making. Tobey Nemeth and Michael Caballo run a small, seafood-led dining room on Niagara Street in King West, where a multicourse menu changes with the seasons and premium ingredients are asked to speak plainly. Nothing on the plate is doing more than it needs to. To book a table is to hand the evening to a pair of chef-owners who have held the same point of view for more than a decade, and to trust them to compose the meal around whatever the season has sent.

The two dishes the kitchen returns to mark out its range. The snow crab sits at the light end, its sweetness first sharpened by fennel and then rounded off. The John Dory travels further: white asparagus and porcini set beneath the fish, an Amontillado Sherry sauce pulling the plate toward something nuttier and unmistakably Spanish. Around those two, the seasonal menu works through seafood, vegetables, and wild mushrooms, with house-cured sausages, a cheese course, and dessert offered as additions rather than fixtures. Each is priced as a choice rather than an upsell — a longer meal for the table that wants one, a shorter one for the table that does not.

Behind the menu sits a sourcing network the kitchen makes no secret of: farmers, fishers, and foragers who decide, week to week, what the cooks have to work with. Wild mushrooms and premium seafood are not accents here but the reason the menu reads the way it does — organized around supply rather than a fixed script. The porcini under the John Dory and the mushrooms that recur across the seasons are the throughline a regular learns to expect. It is also why a dish can headline one month and disappear the next. A kitchen willing to rewrite itself around a forager's haul is showing where its attention goes: to the ingredient at the centre of the plate, and to the person who pulled it from the ground or the water.

The cooking carries its Mediterranean and Spanish references lightly. They surface in a sauce built on Amontillado sherry, in the cured sausages, and in the occasional special that leans all the way into the tradition — an Asador luncheon, named for the Spanish live-fire grill, run as a one-off alongside the regular service. None of it turns Edulis into a Spanish restaurant. The references are tools, picked up when a plate calls for them and set down again, always working in service of the seafood and vegetables the menu is genuinely built on.

Edulis has been a husband-and-wife restaurant from the start. Nemeth and Caballo opened it in the former Niagara Street Cafe space after returning to Toronto, and the division of labour they set then still holds: Caballo runs the kitchen, Nemeth moves between the kitchen and the floor. That arrangement is what gives the place its evenness — the same hands on the food and the same face in the dining room, one year to the next. A Michelin service award, earned along the way, recognized the hospitality as the equal of the cooking.

The format asks something of the guest in return. Tables are few, reservations are prepaid, and the doors open just four days a week — dinner Thursday through Saturday, then a slower Sunday luncheon that runs the same ingredient-first menu at a midday pace. The Sunday seating is the gentler way in, the same kitchen and the same sourcing at an easier hour and a lower price. Strict dietary needs are hard to promise in a kitchen that reassembles itself around whatever arrived that morning. That is the trade Edulis offers: a small, seasonal table, cooked and hosted by the same two people, on terms settled well before anyone sits down.
