Garage Time earned its name the honest way. The brewery grew out of Bernard and Joanna Bennett's own garage in Wellington, where a home-brewing habit turned into something the couple decided to build together. That hands-on beginning is still legible in the way the taproom carries itself — a small board, made in small batches, written with the plain confidence of people who brewed it rather than the gloss of a marketing team. Prince Edward County is thick with places to drink, from cider houses to estate wineries; few of them started in an actual garage, and fewer still keep that scrappiness this close to the surface.

The beer is where the personality lands. The Jalapeño Margarita Gose is the clearest statement of intent — tart, salty, and citrusy, with a fresh pepper note carried inside the beer rather than pasted on top, so the jalapeño reads as flavour instead of a dare. Leo's Michelada pushes further into savoury territory: salty, spicy, and built for the same rimmed-glass ritual as the drink it borrows from, named for the person who inspired it. Jumbleberry Sour is the fruit-forward counterweight, field berries and citrus and a hint of cherry in a deep-pink pour. Three beers, three directions, and none of them the pour a first-time County visitor would expect.

The rest of the board holds up the same range. County Cascade IPA leans citrus and passionfruit into a hoppy finish; The Long Haul is a barrel-aged Flanders red with tart cherry, vanilla, and bourbon warmth; the Hibernating Mechanic dark lager runs creamy and malty with a bittersweet close. There is a rye-barrel ginger beer aged a full year, an easy-drinking house Garage Time Ale, and a session IPA for the long afternoon. Some pours rotate out and sell through — a tangerine gose, a Düsseldorf-style altbier, a non-alcoholic ginger beer sweetened with local honey — which is the nature of a board this size, and part of why regulars check what is on before they arrive.

What ties it together is a cook's sense of balance. Acidity, spice, fruit, barrel age, and savoury turns recur across the list, and none of them arrive as novelty for its own sake. A gose that keeps the beer underneath the jalapeño, a michelada that works as a beer rather than a stunt — these are choices made by someone thinking about how flavours sit against one another. The board rewards curiosity over brand-name familiarity, which makes a flight the honest way to read it: taste across the styles and the logic of the place comes clear.

That palate has a source. By the couple's own account, Bernard came to brewing from a cooking background, and the beer list reads like the work of someone used to building flavour on a plate. Garage Time opened in 2021, the kind of passion project that grows out of a long-held plan to run a business together, and it has stayed deliberately small and County-made — natural ingredients, local fruit and honey where the beer calls for them, and batches sized to a nano brewery rather than a regional one. Local reporting has described the Bennetts in much the terms they use themselves: a tiny operation, close to its ingredients and its customers.

The shape of a visit follows from all of it. Garage Time keeps taproom hours across the weekend, pours flights on a patio, and sends beer home in cans, which makes it easier to fold into a day of County brewery-hopping than to treat as a stop in its own right. The move is to taste across the board, find the pour that lands hardest — for most tables that is the jalapeño gose, Leo's Michelada, or the berry sour — and leave with a few cans of it. The garage is behind them now, but the habits it taught are still in the glass.
