A hotel dining room is allowed to coast on its address. The kitchen inside Owen Sound's Best Western Inn on the Bay could trade on the Georgian Bay view alone, send out a safe breakfast and a burger, and few guests would object. Bishop's Landing does the opposite. It runs a full kitchen from a six-thirty weekday breakfast through to a striploin dinner, and it treats the local catch — Georgian Bay whitefish, dill-seasoned under a citrus butter — as a headliner rather than a courtesy to the setting. The waterfront patio, a wide terrace at the downtown end of 2nd Avenue East facing the bay, is the feature most of Owen Sound names first.

The range is real. Lunch and dinner run on a comfort spine — the Bishop's Burger on a seven-ounce chuck patty with chipotle aioli and crisp fried onion, jumbo wings in more than a dozen sauces from Arizona Ranch to Fire and Ice, loaded nachos, maple-glazed brussels sprouts fried with bacon and parmesan — but the kitchen keeps reaching past it. An eight-ounce Triple-A Angus striploin arrives under compound butter with the option of a garlic-shrimp skillet. A braised lamb shank, mussel and shrimp pesto linguine tangled with PEI mussels and jumbo shrimp, chicken parm over linguine, and a forest-mushroom alfredo penne fill out the entrees, while fish and chips comes in a house beer batter around a Pacific cod fillet. Coconut shrimp with sweet Thai chili and a sundried-tomato stuffed chicken breast under a roasted red pepper cream add more reach still. Vegetarians are not an afterthought: a grilled vegetable wrap with quinoa and feta, a roasted red pepper grilled cheese on sourdough, bruschetta with goat cheese.

What all of that signals is a kitchen unwilling to let "hotel restaurant" set its ceiling. The seafood is the clearest evidence — whitefish from the bay the patio overlooks, Atlantic salmon under a teriyaki honey glaze, PEI mussels doing double duty in a starter and a pasta — in a category where the easy move is to stop at a fish basket. The steak and the braise make the same argument from the land side. None of it is fussy; the plates are built to be recognized first and then executed a notch above where the setting would let them get away with. It reads as a room cooking for two audiences at once: the hotel guest who wants a dependable plate without leaving the building, and the local who drove in for the terrace and stayed through a second course.

The clock is part of the identity. Doors open early — six-thirty on weekdays, an hour later on weekends — and breakfast is a full section rather than a buffet afterthought: eggs Benedict, a smoked salmon version with cream cheese, a bacon-and-chipotle Bishop's breakfast sandwich, and the Pilot's Pre Flight, a plate of three Canadian Grade A eggs with centre-cut bacon, glazed ham, and sausage. Service runs straight through to nine, which makes the place as workable for a Tuesday morning as for a Saturday dinner. A kids' menu, ample hotel parking, and a spread broad enough that a table rarely fails to agree keep it in rotation for families and groups.

The lounge and the terrace do the rest. Cocktails, Ontario wine and beer, and late coffee drinks anchor a bar built for the view, and the group-and-celebration trade — birthdays, anniversaries, a table on the patio at sunset — is booked the old way, by phone, since there is no online reservation funnel. The whitefish comes out of the same water that terrace overlooks. Order it toward evening, when the light drops behind the harbour and the patio fills, and the bay view turns out to be the second-best thing about the table.
