The pastry case is where a Persian kitchen announces itself, and this one opens with baklava layered in rose, cardamom, almond, and pistachio, a delicate Cake Yazdi built on cardamom and rose, and a saffron-tinted Toranj cheesecake. Lavender is a family-owned patisserie and coffee shop in Wellington West, part cake studio, part café, part pastry counter, and its Persian line is what lifts it past a coffee-and-cake stop. The espresso bar and the cheesecake case are familiar furniture; the flavours moving through them are not.

The creamy-pastry section is where the house hand shows most clearly. Latifeh arrives soft and cloud-light; the Persian Eclair Puff is a crisp shell around airy whipped cream, offered plain or finished with choco-pistachio; a Pistachio-Saffron Roulade folds saffron and pistachio into a single slice, and a vanilla Napoleon stacks flaky mille-feuille between layers of cream. The cheesecake case runs wide — blueberry New York style, apple crumble, pecan and maple, pomegranate, and a Lavender-Lime that writes the shop's own name into the menu. Cookies hold their own corner, from a cardamom-scented walnut cookie that happens to be gluten-free to pistachio biscotti and simple date cookies. The hot line is a straightforward espresso bar — brew coffee, cappuccino, chai latte, a Canadiano — there to carry the pastry rather than compete with it. Even the cold drinks keep the accent: Shirin blends saffron, rosewater, and chia, Shahrzad layers lavender, orange blossom, and blueberry, and Nooshin cools to cucumber and mint.

What ties these sections together is a flavour palette borrowed from Persian baking and carried into formats that usually come from somewhere else. A New-York-style cheesecake, a matcha latte, a masala chai, and a tray of baklava rarely share a counter; at Lavender they answer to the same shelf of rose, saffron, cardamom, and pistachio. None of it reads as novelty for its own sake; the saffron and rose recur because that is simply how this kitchen bakes. The kitchen is halal, and the brunch board widens the range without breaking the accent — sourdough sandwiches with smoked turkey or with pesto and cheddar, an avocado-and-egg sandwich, a Walnut and Mushroom Cheese Quiche, a Spinach and Feta Quiche. This is a pastry counter with a particular accent, not a café that keeps a few Persian sweets on hand.

The accent has a short history behind it. Lavender presents itself as a four-member family project rather than a chef's showcase, and the menu bears that out — the recipes carry the biography, from the cardamom in the Cake Yazdi to the rosewater poured into the cold drinks. That framing is deliberate: the people behind the counter are the family who built the place, not a résumé of kitchens, and the shop reads as their first local translation of a baking tradition they brought with them. Wellington West is the setting for it — a stretch of the city already thick with cafés and bakeries, now holding one that carries a Persian pastry counter into the mix. Lavender opened in December 2024, a year after that family arrived in Canada.

Lavender is built for more than one kind of visit. The same counter fills a whole-cake order for a celebration, a morning coffee with a walnut cookie, a weekend brunch, and a curated Tea Time that pairs savoury bites with pastries and the house drinks. You order at the counter — there is no reservation desk to work around — and takeout carries the rest of the range out the door. What the pastry case does, it does in a register Wellington West does not hear on every block: Persian baking, a year into a new country, translated into éclairs, cheesecakes, and iced saffron, and sold across the length of a day.
