The tap list at Covered Bridge Brewing swings further than the size of the operation suggests. On the easy end sit a blonde ale built on bready malt and a kolsch named for the village the brewery now calls home; on the other, a whiskey-barrel brown and a double black IPA that push toward ten percent, the kind of pour meant to be nursed rather than knocked back. Between those poles the board carries a hazy IPA, a peach kolsch, a key lime kolsch, and a chocolate hazelnut stout — a wide spread for an independent taproom in the countryside west of Ottawa. Covered Bridge is built so the first-timer and the barrel-chaser can both find their glass on the same afternoon.

The Lazy Brewer is the most-ordered pour on the board and the clearest read on where the brewery sits now: a hazy New England IPA leaning tropical and stone-fruit, modern without tipping into one-note hop volume. The Dirty Blonde works the middle of the list, a blonde ale carrying mild citrus and floral hop notes over bready, toasty malt, with a light fruitiness the English yeast leaves behind. Orange Blonde keeps that easy-drinking frame and brightens it, folding orange into a lighter, citrus-forward pour that travels well in a take-home can. Together the three make an approachable spine, the beers a table reaches for before working up to the heavier end.

That heavier end is where the brewery shows its range. The Whiskey Barrel Brown Aged carries the wood, the double black IPA runs dark and strong, and the chocolate hazelnut stout lands near ten percent — beers that ask for a small pour and a slower pace. Kolsch is a recurring thread too, from the straight Kinburn Kolsch to peach and key lime versions that keep the lighter side playful. The taproom pours flights and small glasses beside full pints, which is the honest way to drink here: a table can cross from a kolsch to a barrel-aged strong beer without committing a full pint to each stop along the way.

What the board doesn't come with is a standing kitchen. Covered Bridge is a brewery first and a bottle shop second, and its food is programming rather than a fixed menu — perogy nights, beer-pairing evenings, live music, market days. The patio is dog-friendly and does real work in warm months, turning a quick beer run into a longer sit. Cans leave through pickup and local delivery, so the beer reaches well past the seats inside. On a given weekend the taproom fills around whatever it has booked: perogies and a band one night, a farmers market the next.

By the family's own account, the brewery began as a home-brew habit: John vanDyk was making beer on a Mr. Beer kit before he and his wife, Kathy, opened Covered Bridge in Stittsville in December 2013. Recognition came early — a wood- and barrel-aged strong beer took a gold medal at the Canadian Brewing Awards in the brewery's second year, and that barrel-aged strain still runs through today's board in pours like the Whiskey Barrel Brown Aged. In 2024 the vanDyks moved the operation west to Kinburn, trading the Stittsville address for a rural one and rebuilding the taproom and bottle shop around the new setting.

Kinburn is the chapter the brewery is writing now, and the board has already absorbed the address: the Kinburn Kolsch puts the village name on a pour and reads as a small act of settling in. For a stretch of countryside west of the city, what the vanDyks run is a full local brewery in everything but the kitchen — a taproom for a slow flight, a bottle shop for the drive home, a patio the dog can join, and a calendar of markets and music that keeps regulars coming back between beer runs. The beer stays the constant. Everything around it exists to send more of it out into the countryside that now surrounds it.
