This is the core reason to go: hand-pulled noodle bowls with beef broth, dan dan sauce, pickled mustard, ribs, chitterlings, and cold-noodle options sit at the centre of the menu.

Noodles have enough range to shape a meal rather than fill a single menu slot. Khao Soi, Pad Khee Mao, Pad See Ew and Pad Thai move between coconut broth, wok char, broad rice noodles and tamarind, giving repeat visits more than one obvious noodle path.
