Sunlight Grill never turns on the dinner lights. The kitchen on Oakville's Royal Windsor corridor opens early and closes by mid-afternoon, so everything it does has to happen between breakfast and a late lunch. What fills those hours is the complete plate rather than the light one — stacked egg breakfasts, griddle sweets under strawberries and whipped cream, and a deep bench of sandwiches for the table that has moved on from eggs. The Lumber Jack Breakfast sets the tone: four eggs, four strips of bacon, four sausages, home fries and toast on a single plate. Come hungry is less a slogan than a plain description of how the menu is built.

The breakfast core splits cleanly into savoury and sweet. On the savoury side, the Sunlight Signature Combo is the broadest single read on the kitchen — three eggs with peameal, sausage, ham, baked beans, home fries and toast, a plate that covers nearly everything a diner means by the word breakfast. The Three-Egg Classic Breakfast, Peameal Bacon and Eggs, and Corned Beef Hash and Three Eggs work the same lane with fewer moving parts. The sweet side carries the house name and the house look. Sunlight Pancakes stack three fluffy rounds under fresh strawberries, strawberry preserves and whipped cream; the Sunlight Cinnamon French Toast runs the same fruit-and-cream treatment over griddled bread. A Banana Split Waffle and house-made milkshakes push the sweet end toward dessert without ever leaving the breakfast table.

Past the combos, the menu shows where the kitchen is willing to compose rather than assemble. The Benedict lane runs three ways: a Classic Benedict on peameal and an English muffin, a Smoked Salmon Benny, and the Sunlight Benedict layered with caramelized onions, mushrooms and Swiss beneath poached eggs and hollandaise. Skillets bury home fries, eggs and cheddar under either a meat-lovers mix of bacon, sausage, ham and peameal or a chicken, mushroom and pepper build. Omelettes hold the middle with the green-pepper-and-peameal Sunlight and the bacon-and-mushroom Canadian, both arriving with home fries and toast. The breadth is the point. A table can order breakfast five different ways and still be eating, recognizably, the work of one kitchen.

Lunch is the menu's quiet utility, the part that keeps the tables turning after the morning rush. When someone has finished with eggs, the Sunlight Chicken Club, a Turkey Club built on Montreal smoked turkey, and a Reuben of corned beef, sauerkraut and Swiss on grilled rye carry the sandwich side. Greek pitas — chicken souvlaki and gyro, each with tzatziki, fries and coleslaw — bring a Mediterranean turn, while Fish and Chips on lightly battered haddock, a pound of wings and a grilled chicken wrap fill out the heartier end. For a lighter order, the Smoked Salmon Bagel layers cream cheese, sweet onions and capers, and the Sunlight Spring Salad pairs baby spinach with craisins, feta and a poppy-seed dressing. It is the kind of breadth that quietly ends a standoff: the group that cannot agree between a pancake stack and a club sandwich does not have to.

The operating shape is as plain as the food. Sunlight Grill keeps daytime hours, runs table service alongside takeout and delivery, and sits with its own parking on Royal Windsor Drive — most of what a neighbourhood breakfast stop needs to earn a weekday habit. Portions run generous and the room stays casual, which suits a menu that rewards appetite over occasion. In the decade since it opened in 2015, the kitchen has not chased trends or narrowed its aim; if anything it has widened, folding lunch plates and Mediterranean pitas into a breakfast list that already ran long. By mid-afternoon the griddle cools and the doors close — the whole day's work finished before the rest of the corridor has started thinking about dinner.
