Nothing about that is quick, and that is the point: the ribs come off fall-off-the-bone tender, and the brisket carries the dark bark and deep smoke that only real time in the pit will give it.

Beef Brisket is the clearest read on that fire — the cut that shows what half a day of hardwood does to a piece of meat, and it holds up against the sharp crunch of Apple Slaw. Baby Back Ribs make the argument for a full barbecue plate, while the Pulled Pork Sandwich is the faster, lunch-sized way in; a Brisket Sandwich splits the difference for anyone who wants the flagship cut without committing to the whole plate. From there the menu widens well past the pit. A Smokehouse Quesadilla, tacos, and the Stack Burger pull in the diners who did not come strictly for smoked meat, and the sides carry their own weight: Jalapeño Cornbread with its slow heat, Mac N Cheese, charred Brussels Sprouts. Mini Doughnuts, warm and dusted in sugar, land the meal somewhere other than smoke.

That breadth is the tell. A narrower smokehouse would stop at meat and two sides and dare the table to agree; STACK is built for the table that never will. Craft beer and wine sit alongside the barbecue, so a plate of ribs arrives with something poured to match it, and the spread of burgers, tacos, and salads means a group holding one barbecue devotee and three holdouts can still order without a standoff. The kitchen treats range as hospitality rather than dilution — the pit stays the point, but no one at the table gets stranded.

There is a family business behind the barbecue. STACK has been family-owned and operated since 2012, and the method — Texas-style, hardwood, unhurried — is the through-line it has kept as it has grown across the Greater Toronto Area. Texas-style barbecue leans on beef and patience more than sauce, and the twelve-hour cook is where that shows. The Oakville outpost opened in 2021 inside Oakville Place, which sets a serious smoker down at a shopping-centre address better known for its retail than its brisket. STACK leans into that contrast rather than apologizing for it, cooking the same slow barbecue it would anywhere else.

Day to day, the smokehouse works as a neighbourhood option more than a special-occasion pilgrimage. Reservations hold a table when the timing is fixed; online ordering and delivery cover the nights the craving arrives at the couch instead; catering sends the pit's work out to gatherings that have outgrown the kitchen at home. None of it is priced like an event — the barbecue sits in the mid-range, which keeps a Tuesday visit as easy to justify as a Saturday one. Lunch through evening, seven days a week, the smoker keeps a steadier schedule than most kitchens its size, since the long cook has to begin well before the first order does.

And on Sundays, children under ten eat free — a small policy that points straight at the table this smokehouse is really cooking for. The twelve-hour brisket earns the attention, and rightly so, but the Sunday kids' menu and the catering trays say just as much about who STACK expects to feed: families over the weekend, weeknight tables ordering the usual, and the crowd that would rather carry the smoke home in a tray.
