Pizza Pienza

9.0

First time here? Take the 30-second tour of how Restaurantica works!

Montreal smoked meat is not an Italian ingredient, and the Smoky Pizza — smoked meat over white cheddar, cream cheese, Parmigiano Reggiano and a handful of fresh arugula — is filed on the Pizza Pienza menu under Classic Italian Pizzas. That is less a filing error than an accurate account of how this kitchen thinks. Pizza Pienza is a family-run pizza shop on Lakeshore Road West, in the heart of Bronte Village, and it has been baking from that address since September 2014. The menu it built there runs two registers at once: one that stays close to the Italian canon, and one that goes wherever a good idea happens to be. Both come off the same board, in three sizes — twelve inches, fourteen, and eighteen.

The gourmet list is where the specific builds live. Peachy Pizza sets seasoned olive oil and goat cheese against prosciutto and peaches, finished with fresh basil and a swirl of balsamic glaze, so that sweet, salt and acid each get a turn without one taking over. Cajun Delight goes the other way entirely: a Cajun-blended tomato sauce under blackened steak, bacon, hot banana peppers, white cheddar, crispy onions and fresh arugula, with remoulade swirled over the top. Rico Pizza is the one to keep on the table when the others get loud — spinach, ricotta, seasoned tomato, mozzarella and Parmigiano Reggiano, rich without volume. The Pienza Special carries the house name and spends it on sautéed mushrooms, green olives, prosciutto and artichokes. The classic Italian side of the board answers with the Arugula, bocconcini and mascarpone under cherry tomatoes and a tangle of greens, and the Italiano, spicy sausage with mushrooms and black olives. Beyond the pizzas: calzone, freshly made salads including a straightforward caprese, garlic bread, potato wedges, and wings in nine sauces running from honey garlic to tandoori.

What holds the two registers together is not a topping philosophy. It is the crust list. Any pizza can be ordered on regular, thin, thick, whole wheat or gluten-free crust, and the cheese can come dairy-free. That matrix does quiet structural work: the table that cannot agree does not have to, and the person avoiding gluten or dairy orders from the same board as everyone else rather than from a shortened version of it. Plenty of pizzerias treat those options as accommodations bolted on at the end, listed separately and set apart. Here the flexibility is built into the board itself, which is what lets a menu this wide stay a single menu.

The operation is built the same way. There is no reservation to make and no booking surface to work through; the dining room takes walk-ins, and takeout and delivery run alongside it. Ordering happens by phone or online, and the shop says plainly that it does not take orders by email. Nothing here is arranged to be discovered by a visitor — it is arranged to be easy for someone who already knows what they want. Bronte Village is a walkable stretch of Lakeshore Road West a short way up from the harbour, and a family-run pizza shop on a street like that either becomes part of the weekly routine or it does not stay.

High-quality ingredients in modern recipes, plus tried-and-tested classics — that is how Pizza Pienza describes its own menu, and it reads like boilerplate until you put it against the board and find it literally true. Mascarpone and cherry tomatoes on one line, blackened steak and remoulade a few lines down, and a create-your-own option for anyone who wants neither. The specialty pizzas are the reason to pay attention. The crust options are the reason a group of six can order together without anyone being handed a compromise. Start with the Peachy Pizza and put the Cajun Delight next to it; between the peaches and the remoulade sits most of what this kitchen is willing to try.

Three things this kitchen does the rest don’t

  1. 01

    Named Specialty Pizza Builds

The strongest signal is a specialty pizza list with identifiable builds rather than generic topping combinations.

  2. 02

    Flexible Crust and Cheese Matrix

Regular, thin, thick, whole wheat, gluten-free crust, and dairy-free cheese options make one menu easier to adapt for mixed groups.

  3. 03

    Bronte Village Neighbourhood Longevity

The official restaurant page places Pizza Pienza in Bronte Village and states it opened in September 2014.
