The name makes a promise the kitchen has no intention of keeping. Easy on Fourth opened in 2021 in Oakville's north-end business corridor, and the word easy sets an expectation — a burger, a pint, a low-effort night with a game on somewhere in the background. The food argues otherwise: certified Angus beef aged at least twenty-eight days and hand-cut in-house, PEI mussels steamed in prosecco, a seven-cheese fondue built on craft beer, and a full dinner menu that keeps climbing from there.

Two ingredients run through the menu like a spine. The first is brisket. Certified Angus beef gets a dry rub and a long, low beer braise, then turns up across the kitchen in three different forms — hand-carved into a sandwich with bourbon barbecue, caramelized onion, and remoulade; layered over poutine with smoked mozzarella, sautéed mushroom, and house gravy; or folded onto a flat bread with roasted red pepper and chèvre. One cut, three treatments, all built on the same overnight braise.

The second is beer, and it does far more here than fill a glass. It batters the fish and chips, braises the brisket, and melts into a seven-cheese fondue poured over fruit, vegetables, and brioche crostini. The beverage list backs the cooking up: draught beer alongside craft cocktails, martinis, cider, seltzer, and a rotating cast of Ontario brewery names. This is where the craft-bar side comes forward — the same sensibility that shapes the food shapes the drinks, so a fish-and-chips order and a pint of Ontario draught pull in the same direction. Order the fish and chips and you are tasting the same craft beer that shows up in the batter, the braise, and the fondue.

For all that focus, the menu spreads generously wide. Flat breads run from prosciutto and asiago to chipotle shrimp with banana peppers and lime. There is a bourbon blue cheese burger, tequila lime chicken nachos built for the middle of the table, hand-breaded chicken parmigiana over bucatini, and a croque-style white mac and cheese crowned with a fried egg and a remoulade drizzle. Comfort runs deep on the smaller plates too — wings marinated at least twenty-four hours, a baked onion gratinée under gruyère and aged white cheddar, brisket poutine. At the upper end, an aged filet mignon and PEI mussels steamed in prosecco push toward the restaurant's price range, while power bowls, a balsamic berry pecan salad, and a spicy vegetable jambalaya keep lighter and vegetarian tables covered. Few groups will have to negotiate over where to eat.

Easy on Fourth is built for the planned casual night as much as the walk-in dinner. Tuesday trivia at seven-thirty is the clearest recurring reason to time a visit around the room rather than the menu, and select Saturday nights bring live music. A junior menu keeps it workable for family dinners, while shareable nachos, wings, and fondue suit a group that wants to graze before anyone commits to a main. Parties of fifteen or more are pointed toward calling ahead about opening before the usual afternoon start, and the restaurant runs its own online ordering for takeout — the marks of a place that would rather plan for a crowd than turn one away.

What holds all of this together is not a cuisine but a posture. The menu reaches from a twenty-eight-day filet to a weeknight power bowl without apologizing for the distance, and the beer program runs through the whole thing instead of sitting off to one side at the bar. Trivia nights and live music give the week its rhythm; the junior menu and the group-timing note give it reach. The sign out front still says easy. The kitchen treats the word as an invitation rather than a limit.
