Most brewery taprooms treat food as an afterthought — a pretzel, maybe nachos, something to keep a pint company. Blackburn Beer Company built the opposite. The Niagara Falls brewhouse handed its kitchen to 43North Restaurant Group, and the result is a menu that reads like a casual restaurant that happens to make its own beer: stone-baked pizzas, smashburgers, wings, tacos, and bowls, all built to pair with what comes out of the tanks.

The pizzas anchor the food. The Bianca runs white — olive oil and garlic instead of tomato, with spinach, artichokes, Fior di Latte, Parmesan, and oregano. The burgers hold their own beside it: The Blackburn Burger stacks an AAA beef patty with crispy onion, smoked bacon, cheddar, and smash sauce, while the plainer Smashburger keeps to pickles, lettuce, and a brioche bun. Around them sits the shareable middle of a beer-led table — the jumbo pretzel with mustard and queso, nachos built for chicken or beef, wings in Buffalo or mango chipotle, Taproom Tacos with a choice of beef, chicken, or artichoke. For a lighter plate, the Brewmasters Bowl loads charred cauliflower, honey-roasted beets, goat cheese, and sticky rice under Goddess dressing, and a graham-crusted key lime pie closes the meal.

The beer is the reason any of it exists, and the food has been plotted around it since the brewhouse opened in 2020. Pizzas come stone-baked, which is partly a kitchen choice and partly a pairing one — a crisp, charred crust holds up next to a cold pour where a softer base would go slack. The menu is written to be ordered against a flight: the pretzel and queso for a lager, wings and their sauces for something hoppier, the Brussel sprouts in their Bianca sauce for a table working through the taps. Where a standard pub bolts a beer list onto a food menu, Blackburn runs the two on the same track, the kitchen and the brewery sharing one plan.

That coordination is what makes the place work for the mixed table rather than the purist. A vegetarian can eat well off the Crispy Brussel Sprouts and the bowl; a kid gets a straightforward pizza or chicken fingers; a beer drinker gets a plate that stands up to a flight. The breadth is the point. It is the answer when a group cannot agree, which is most of what a taproom on the edge of a tourist city gets asked to settle.

Then there is the secret menu, where the brewery's playfulness shows. It is not a list of specials — these items are always on, hiding in plain sight. The drinks lean into the beer: a Panache cuts Blackburn Light Lager with Sprite, Katie's Summer Special blends raspberry and cherry seltzer, and the rest runs to one-litre steins and house pours with names like Blueberry Fields Forever and Benji's Brew. It is the kind of half-joke a kitchen only bothers with when it expects regulars who already know the standard board.

The week has its own rhythm. Wednesdays run trivia and Thursdays bring cruise nights, first come and first served; Fridays and Saturdays fill enough that the brewhouse asks guests to reserve. That cadence names who Blackburn is for — not the once-through tourist, but the table that comes back on a weeknight and orders into the secret menu. A few minutes off the Falls, on the quiet Kalar Road side of the city, Blackburn works less like a stop on the tourist circuit than a beer hall the neighbourhood keeps coming back to, the kind that already knows what is on the secret menu.
