Aqua Lounge & Restaurant, the lobby-level dining room inside the Crowne Plaza in downtown Kitchener, sets a wider table than that. The reach is the point. Dinner has a clear spine. The kitchen's cleanest plate is the baked salmon, a six-ounce fillet under a creamy lemon-dill sauce with butter rice and seasonal vegetables — the order to make when the meal needs to feel composed rather than casual. The fish and chips keeps the pub side honest, crispy battered cod with fries, coleslaw, and tartar sauce. Butter chicken pulls the Indian thread into focus, the marinated breast simmered in a creamy sauce and plated with butter rice, warm naan, and a side salad. Room service carries the same menu upstairs, which is where the sturdier orders make the most sense: butter chicken, a classic burger, fish and chips, or chicken fingers travel a hallway better than a delicate plated main. For a visitor working out of downtown Kitchener, that combination of a full dinner menu, a morning service, and a kitchen a short elevator ride away is the practical case for eating in the building instead of hunting the block.

What keeps Aqua from reading as generic is that it gives a diner somewhere specific to start. Order the salmon and it behaves like a restaurant; order the butter chicken or the fish and chips and it behaves like a neighbourhood kitchen that happens to share an address with a hotel. On King Street East, a few steps from the downtown core, that flexibility is the whole utility: a place that can host a business dinner, feed a family passing through, or send a curry upstairs at the end of a long travel day, and mean it each time.
