Toby's Club House is the clearest single dish on the board: a triple decker built with chicken breast marinated overnight and grilled in house, bacon, lettuce, tomato, and mayo. Haddock Fish and Chips comes battered and fried in house, served with coleslaw, fresh tartar, lemon, and a choice of chunky or skinny chips. The cheese sauce is doing more work than a side note. It is the through-line that links a fries order, a poutine, a clubhouse plate, and a baked pasta back to one kitchen decision, and the in-house battering of the haddock and the overnight marination of the clubhouse chicken sit beside it as evidence the prep is current. Soup De Jour cycles on a daily rotation; funnel cakes come out of the dessert station fresh; breakfast carries through the whole day rather than tapering off mid-morning. Toby's has carried the name in downtown Hamilton since 1984, and the operation is still family-owned and family-run. The wider Toby's diner brand has thinned out over the decades; this King Street West dining room is what is left of it, which gives the cheese sauce and the chunky fries a different weight than a current concept's signature plates. Forty-two years in, the same kitchen has put a Beyond The Meat burger on a vegan pretzel bun on the same menu as the haddock that still gets battered to order and the breakfast poutine that did not exist in 1984.

Use of the dining room runs broad. Weekday breakfast and lunch on Mondays and Tuesdays; an extended dinner stretch Wednesday through Saturday; a short Sunday brunch closing at three; pickup, delivery, and OpenTable reservations alongside dine-in for the table that wants to plan ahead. The Hamilton order at Toby's tends to be the one that wants a specific thing — a clubhouse the way a diner makes them, the fish and chips that comes out of the same fryer all day, the chunky fries with cheese sauce, a Benedict Poutine in the morning instead of after midnight. The downtown corridor has cycled through forty years of new restaurants since the Toby's sign first went up on King Street West; the cheese sauce keeps showing up on tables anyway.
