The name came from the guests. When the first August 8 opened in downtown Hamilton in 2008, it meant to go by August; diners kept calling it August 8, and the longer version is the one that stuck. That small act of renaming suits a restaurant built on giving people more than one thing at once. August 8 puts Cantonese dim sum and Japanese sushi on a single all-you-can-eat menu — two traditions most kitchens keep in separate buildings — and asks a table to treat them as one meal, ordered together and paced across an afternoon or a full evening. A round of steamed dumplings and a plate of pressed sushi come from the same order, at the same sitting, for one price.

The breadth is the point, and the menu earns it. On the dim sum side there are Supreme Shrimp Dumplings, Steamed Pork Shiu Mai, Sticky Rice in Lotus Leaf, and Chicken Feet with Black Bean Sauce — the standards a Cantonese tea house would recognize. The sushi list runs to Hamilton's Roll, the Red Dragon Roll, and Oshi Pressed Salmon and Scallop, a pressed and lightly torched option for anyone after something past a standard maki. Between the two traditions sit the crossovers that give the kitchen its personality: a Spicy Salmon Taco, a Beef Mushroom Roll, a plate of August 8 Fried Rice, and a Lava Custard Bun to close. Nothing on the menu asks a table to pick a side.

All-you-can-eat changes how a meal gets run, and August 8 leans into the mechanics of it. Ordering happens through tablets at the table, so a group scrolls the full illustrated list, sends a first round, and course-corrects from there — every plate cooked to order and carried out, not pulled from a buffet line. Breadth rewards pacing: smaller rounds reveal more of the menu than one big order ever does, and deciding what to send next becomes part of the evening rather than a chore at the start of it. The setting matches the system, clean and modern rather than institutional, and the dining room is loud in the way a full one is — built for groups working through a shared pile of plates rather than quiet dinners for two. Beer, wine, and sake are on hand for the table that wants to make an afternoon of it.

This Hamilton location is the original, and the distinction matters more now than it once did. What began as one downtown restaurant has grown into a homegrown concept with locations across Southern Ontario, and the first still carries a marker the others can't claim: Hamilton's Roll, named for the city that started it. The pairing was an unusual bet when the doors opened — sushi counters and dim sum kitchens rarely share an address — and the fact that the format spread this far says the bet paid off, though it was worked out here first. For a downtown that has watched plenty of restaurants open and close, a concept that grew outward from a Wilson Street address is its own kind of endorsement.

What keeps August 8 useful is that it settles arguments. When a table can't agree between dumplings and sushi, or between the familiar and the adventurous, the all-you-can-eat format lets everyone build a meal without anyone giving ground. That is why it turns up so often for birthdays, family gatherings, and the mixed-crowd dinners where no single cuisine would satisfy everyone. Lunch runs the same range as dinner at a gentler price, and takeout carries most of the menu home for the nights that call for staying in. Eighteen years on, the number the guests chose still fits the restaurant they were describing.
