The tandoor does the talking at The Bollywood Bistro. The clearest first order is the Tandoori Mix Grill — lamb chops, chicken tikka, chicken hariyali, lamb seekh kabab, and malai tikka landing together on one plate — a sampler that states what the kitchen can do before a single curry reaches the table. From there it widens fast: North Indian curries and biryani, a full Indo-Chinese Hakka section, a deep vegetarian lane, seafood curries, and midday thalis, all run out of one east-end Guelph kitchen on York Road.

Starters set the tone for that kind of building. Samosas come crowned with chana masala, yogurt, and a sweet tamarind chutney; onion bhaji and crispy okra fry up in chickpea batter; chicken pakora handles the table that wants something off the bone; chana batura pairs two pillowy bhature with chickpeas and pickle. Then dinner finds its spine. Butter Chicken anchors the creamy lane — boneless tandoori chicken folded into a mildly spiced tomato-and-butter sauce — with Chicken Tikka Masala beside it and a bone-in Goat Curry simmered slowly in onion and tomato for anyone after more chew. The tandoor keeps working past the mix grill, through Tandoori Chicken, Chicken Tikka, and a cashew-and-cream Murgh Malai Tikka, while garlic naan made to order and basmati biryani — chicken, mutton, goat, shrimp, or vegetarian — fill in around the edges. Most mains sit in the mid-teens, which keeps a full spread within reach.

What sets the menu apart is everything stacked around the curries. The Hakka section — the Indo-Chinese cooking Indian kitchens across Canada have long since made their own — runs from Chili Chicken, wok-fried with green chilies and soy, through Hakka chow mein, steamed momos, and a Tandoori Momo Platter that pulls dumplings into the clay oven. Even that lane keeps a vegetarian door open, with Chili Paneer for the table that wants the wok without the meat. Vegetarians get genuine depth elsewhere too, rather than one token paneer dish: a Bollywood Tandoori Veg Platter, Dal Makhani enriched with butter and cream, Shahi Paneer, Palak Paneer, and Aloo Gobi. And the seafood is no afterthought — a coconut-laced Goan Shrimp Curry carrying a hint of vindaloo heat, a tomato-forward Shrimp Masala beside it.

Lunch is its own proposition. The midday thalis — a Veg-Thali of mutter paneer, aloo gobi, and dal makhani, or a Non-Veg Thali that swaps in chicken, butter chicken, or lamb curry — arrive as complete plates with rice, naan, salad, and a gulab jamun to finish, which makes the thali the fastest way to read the whole kitchen in one sitting. The kitchen runs two services a day, seven days a week, lunch then dinner, which is part of why the thali habit sticks. Past the dining room there is a worked-out catering operation: vegetarian and non-vegetarian spreads, tandoori appetizers, rice, breads, and dessert, the kind of order that books with a head count and a deposit rather than a walk-in, plus takeout and delivery for the nights when staying in beats going out. The restaurant has fed Guelph since 2005, moving more than once across the city before settling where it is now.

For all that breadth, the Bollywood Bistro keeps a clear centre of gravity: the clay oven and the curries built around it. The signature run is a Tandoori Mix Grill to start, a creamy curry to anchor, one Hakka plate for contrast, a vegetarian dish, and enough garlic naan to carry it. A vegetarian can lead that table; a seafood eater has a real say; a group split between mild and fiery can keep a cashew-rich Murgh Malai Tikka and a sharp Chili Chicken going at once. The breadth never scatters, because the tandoor keeps pulling the meal back to the same fire.
