A Brussels sprout taco holds the same billing as a habanero brisket taco at The Mule Cambridge, and the kitchen means it. The vegetable isn't a courtesy for the one diner who skips meat; it's a headliner, built to stand beside smoked brisket, blackened fish, and achiote chicken in the same mix-and-match round. Habanero brisket carries the menu's richest, boldest end; the O.G. and blackened fish tacos work the lighter side; achiote chicken, buffalo fried chicken, and the pork-heavy Salty Pig fill the middle. That looseness carries into the drinks, where a tequila-forward cocktail list, beer, and wine are built to set up the tacos rather than trail them, and into the evenings, when trivia and karaoke nights turn a meal into a longer sit. The dining room runs loud and colourful, its walls carrying graffiti-style art, favouring energy over ceremony. The plates are built to look as varied as they taste — colourful fillings, bright garnishes, shareable dishes that each arrive with their own identity. Gluten-free diners and vegetarians are named guests here rather than afterthoughts, and the vegetable tacos are the proof rather than the promise.

The restaurant also runs on more than one clock. Separate brunch, lunch, dinner, dessert, drinks, and kids menus give the Cambridge location several shapes: weekend brunch reads as its own outing rather than a smaller dinner, and Friday and Saturday service holds until midnight for the nights that stretch. Reservations and full service make it workable for a group juggling different fillings and diets, while takeout and delivery let the tacos travel when the dining room isn't the plan. The Personal Taco Party — a build-your-own spread of individual tacos — is the format at its most literal: one table, several fillings, no two orders alike. Individual tacos also keep the bill within a table's control — order a couple or build a longer round, and the size of the meal stays a choice rather than a fixed menu.

For all the invention, the throughline is plain. The Mule makes tacos, and it makes them wide enough that a table of mixed appetites can each order well without compromise. The cocktails, the late weekend close, and the trivia nights keep that table seated past the last plate — but the taco is the argument the rest of the menu answers to, brisket or Brussels sprout, ordered without apology.
