On a weeknight, Republik Asian Eatery & Bar works like a full-service Pan-Asian dining room — sushi, karaage and wok plates ordered over an unhurried lunch or dinner. By late on a weekend it runs a different way entirely: a DJ takes the floor, the music comes up, and the same kitchen feeds a lounge crowd rather than a dinner one. Republik holds both of those gears at a single address on the Hespeler Road strip in Cambridge, and it has built a menu wide enough to answer either one without the seams showing.

That menu is the through-line, and its reach is the whole point. The sushi list starts with the Cambridge Roll — avocado, cucumber and crabmeat under a spicy-salmon finish — and opens out across a broader set of maki. The kitchen's Japanese side shows in Chicken Karaage, Yakisoba noodles and teriyaki; its Chinese half runs deepest, through General Tao's chicken, sweet-and-sour fish, wonton soup, lettuce wraps and the house Republik Fried Rice. Thai arrives in a bowl of Tom Yum. Grilled mains stretch the format further still, from honey-garlic salmon to a New York striploin that would sit easily on a steakhouse card. Bangin' Shrimp and the eight-piece Chef Kee's Karaage Chop open the meal, fried ice cream and cheesecake finish it, and a bar of cocktails, sake and beer runs the length of the table.

Breadth like this can read as a kitchen trying to do everything at once, but Republik puts it to work. The menu is laid out with several entry points, so a table that cannot agree — sushi for one, General Tao's for another, the vegetable-forward Buddha Delight for a third — still orders from a single page without anyone giving ground. Halal, gluten-free and vegetarian options widen that door another notch, and the shareable starters give a group something to reach for while it settles on how far to range.

The naming is where Republik shows its intent. Plenty of Pan-Asian kitchens could plate this lineup; few bother to sign it. The Cambridge Roll, the Republik Fried Rice and Chef Kee's Karaage Chop tie the cooking to this location and this cook rather than to a broad cuisine label. Kee Zheng is the chef, and the eight-piece karaage carrying his name — the plate the kitchen suggests starting with while the table decides how widely to order — is the clearest line between a dish going out and the person running the kitchen behind it.

Most weeks, it is the weekday role that does the quieter work. Republik opened in 2023 on a commercial stretch of Hespeler Road built for convenience, and it uses that setting fully: dine-in for a sit-down meal, takeout and delivery for the nights that do not call for one, and a mid-range price that keeps it inside a regular week rather than a special occasion. Lunch specials carry the midday, and the weekend pulls a different crowd — date nights and later groups who come as much for the DJ as for the plates. Booking runs through an online reservation line that takes a table for two as readily as a party big enough to take over the corner for the night.

For a restaurant barely two years old, Republik has already settled what it wants to be — not a specialist chasing one cuisine, but a Pan-Asian generalist confident enough to localize the dishes that matter and to run as two different restaurants depending on the hour. The logic underneath is simple: cook widely enough, and sign the work clearly enough, that a first visit has a reason to become a second.
