The patio does the summer heavy lifting — broad, partly shaded, open to dogs, with water bowls that appear for them unasked — while the screens and the passed plates carry the colder stretch. The wings that start most tables now are the same wings that started them years ago, and the Bullpen Burger has anchored the menu about as long. Bobcaygeon is a small place, and its restaurants are counted rather than assumed; 72 Bolton has spent two decades being one of the counted-on ones, the table a mixed group lands on when nowhere else quite fits.
