La Cueva has been an institution on East Colfax in Aurora for at least 25 years. It's such a tradition to go to La Cueva for so many folks in Aurora it's sometimes impossible to get a table on Fri or Sat evenings.
The Friday lunch special (fish fillet) is my favorite- very tastey and lots of food (go early- they often sell out). The combos are unremarkable- the standard taco/encilada/buritto affairs. Sometimes the service can be slow and our waitress this last trip was a little indifferent to our table. Otherwise the restaurant decore is quite fun and very comfortable. - Order: machaca con Huevo and FIlete de Pescado
